Homemade vegan chocolate chip cookies

Vegan Choc Chip Flax Cookies

Cooking Time: circa 25 minutes


1 tbsp Just Natural Organic milled flaxseed
3 tbsp water, room temperature
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ cup vegan spread of choice (brought to room temperature so soft to touch)
1/2 cup Just Natural Organic coconut sugar
1/3 cup maple syrup
1 tsp vanilla extract
1 cup non-dairy chocolate chips

How to Make it

  1. Preheat the oven to 180°C and pre-grease and line with baking paper a sheet pan.
  2. In a small bowl, combine the milled flaxseed and water. This is your egg replacement, or ‘flax egg’. Set aside.
  3. In a medium bowl, combine the flour, baking soda, and salt. Set this aside also.
  4. In a separate large bowl, mix together the vegan spread of choice and the coconut sugar and maple syrup. Whisk these until fluffy in texture.
  5. Add the flax egg into the butter-sugar mix.
  6. Add the dry mixture into this and with a wooden spoon stir until only just combined (be careful not to over-mix).
  7. Fold in the chocolate chips.
  8. Drop tablespoons of the mixture onto the baking sheet (1 tbsp = 1 cookie) and bake for up to 15 minutes. Be sure to turn the pan halfway through the baking time and remove from the oven when the bottoms begin to brown and the tops still look slightly underdone.
