For the pastry (pre-made vegan shortcrust pastry can also be purchased; this would reduce the cooking time by around 1hr 30mins):
2 ¾ cups all-purpose flour (plus extra for kneading)
1 cup vegan butter of choice
6 tbsp ice-cold water
¼ tsp salt
½ tsp Just Natural Organic coconut sugar
For the filling:
1 packet of vegan chicken alternative of choice
1 tbsp Prima Italia Organic 100% Italian extra virgin olive oil
3 carrots, chopped
½ onion, diced
1 garlic clove, minced
3 tbsp all-purpose flour
3 tbsp vegan butter of choice
1 cup Organic Kitchen oat drink
1 cup vegetable broth
1 ¼ cups frozen peas
2/3 cup sweetcorn
¼ tsp salt
¼ tsp black pepper
¼ tsp Just Natural Organic thyme
NB: Before placing the pie in the oven, you can mixture some oat drink with a little Just Natural Organic ground turmeric and brush that across the surface of the pie for an even more scrumptiously golden colour.
