Five-Ingredient Twix Layer Bars

A date-free, no-bake peanut butter-infused layer bar! No blender or food processor required. These can be made with a few alternative combinations, as well (depending on what you have at hand or your individual taste buds).

Servings: 8-16
Prep Time - 30 minutes

Ingredients

Base

150g Just Natural Organic ground almonds (ground cashews also work well)
60g Organic Kitchen extra virgin coconut oil, melted (or dairy-free butter as an alternative)
3 tbsp maple syrup (or coconut nectar or date syrup)
Pinch of salt

Filling

160g Organic Kitchen smooth peanut butter (you could use almond butter or cashew butter instead)
4 tbsp maple syrup (or coconut nectar or date syrup)
60g Organic Kitchen extra virgin coconut oil, melted (or dairy-free butter as an alternative)

Topping

120g dark chocolate of choice, roughly chopped
2 tbsp Organic Kitchen extra virgin coconut oil, melted

How to Make it

  1. Line a standard 2lb loaf tin with baking paper and lightly grease with coconut oil or spray oil.
  2. Mix together all the base ingredients in a bowl. Press them into the prepared tin and spread evenly with the back of a spoon. Place into the freezer for a few minutes while you make the filling.
  3. Mix together all filling ingredients in a bowl or jug. Pour over the base and place into the freezer to set for at least 15 minutes, or into the fridge for a couple of hours.
  4. Melt the chocolate in a microwave-safe jug or bowl, stirring every 30 seconds until fully melted. It should take about 2 minutes total. Stir in the coconut oil (this will melt in the heat of the chocolate).
  5. Pour chocolate mixture over the set filling and return to the fridge for 20 minutes.
  6. It’s key to then slice the bars when the chocolate layer has just set if you want to get a perfect slice with no cracks!
  7. Store in the fridge for up to two weeks in a sealed-tight container, or freeze for up to one month.
