Soak the oats in a covered bowl overnight, in 4 cups of the water.
The next morning, rinse the oats and place in a blender with the medjool dates (if using a different variety, these will need overnight soaking as well), and the remaining two cups of water. Blend until smooth.
In a small bowl, mix together the remaining ingredients.
Portion out the oat-date blend into serving bowls and top with the spiced and sweetened apple mixture – and simply enjoy!
NB: You can also top with some chopped nuts of choice and/or mix in some non-dairy yogurt for that little bit of extra added creaminess.
