Anytime Vegan Granola

Cooking Time: 35 Minutes (or thereabouts)


​2 cups Just Natural Organic jumbo oats
½ cup maple syrup
3 tbsp Organic Kitchen extra virgin coconut oil (warmed to a liquid state)
2 tsp Just Natural ground cinnamon
1 tsp vanilla extract
½ cup Just Natural Organic cranberries
½ cup Just Natural Organic whole almonds
½ cup Just Natural Organic raw pistachios
¼ cup Just Natural Organic pumpkin seeds
¼ cup Just Natural Organic unhulled sesame seeds

How to Make it

  1. Preheat the oven to 135°C and prepare a sheet pan with a lining of baking paper.
  2. Simply place everything in a large mixing bowl and combine fully.
  3. Spread mixture evenly over the paper.
  4. In the middle of the oven, bake for approximately 20 minutes.
  5. Rotate the pan and bake for a further 5 minutes or so.
  6. Once cool, place finished product in an airtight container for future enjoyment.

NB: Do not be tempted to take a spatula to the tray while baking. The whole point is to be left with chunks and clusters when it comes to granola. Therefore, restrain yourself and only get involved in breaking up the baked mixture when it comes to places it in a storage jar or two.
