Tasty Tahini Flapjacks

Ingredients

150g light tahini
150ml Organic Kitchen extra virgin olive oil
100g maple syrup
1 tsp vanilla extract
200g Just Natural Organic rolled oats
50g Just Natural ground almonds
75g Just Natural Organic sesame seeds, unhulled
Pinch of salt
12 Just Natural Organic unsulphured apricots, chopped in tiny bits
(Just Natural Organic sesame seeds to top)

How to Make it

  1. Preheat the oven to 200°C.
  2. In a medium pan over a low heat, combine all wet ingredients (the tahini, olive oil, maple syrup, and vanilla extract).
  3. In a large bowl, stir all dry ingredients together (the oats, ground almonds, sesame seeds, and salt).
  4. Pour the wet mixture into the bowl with the combined dry ingredients and fold in the chopped apricots until all well-combined.
  5. Grease and line a sheet pan (no bigger than 20cm2) with baking paper and press the flapjack mixture onto the pan so that it reaches all sides. Sprinkle sesame seeds on top.
  6. Bake in preheated oven for circa half an hour.
  7. Let cool in the pan, drizzle with a vegan chocolate sauce for extra decadence, then slice and – that magic word – share!
